Banana Foster Nut Crunch Mix
Ingredients
- 3 cups honey nut crunch cereal
- 3 cups cinnamon cereal
- 2.25 cups pecan / walnut halves
- 1/2 cup butter
- cubed
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1.5 cups dehydrated banana chips
- 1/2 teaspoon rum extract
- 1/2 teaspoon banana extract
Instructions
- Place first three ingredients in a large microwave-safe bowl. Stir to combine.
- Place butter, brown sugar, and cinnamon in a small microwave-safe bowl, stirring just enough to distribute butter and cinnamon throughout the sugar. Microwave sugar butter mixture on high for 2 minutes, stirring half way. Stir in in extracts.
- Pour butter sugar syrup over cereal while stirring cereal to evenly distribute.
- Microwave entire mixture 1 minute, stirring every 30 seconds. Stir in banana chips. Microwave an additional 2 minutes, stirring after 30 seconds and at end.
- Spread onto baking sheets to cool. Store in an air tight container.
Notes
The kind of banana chips used make a big difference. When I used the thicker freeze dried ones from the Dollar Tree, it worked to mix them in with the cereal and nuts at the start. When I used the thinner dried chips from Target, they rehydrated from the butter which made them heavy so they clumped together and some got burnt in the microwave. The directions above are adjusted for these more common banana chips. I prefer the thicker freeze dried banana slices.
I’ve tried replacing two cups of cereal with a chocolate cereal, but preferred the original. I do like chocolate with banana. I tried drizzling melted chips once, but that was just too messy and inconsistent, adding a cup of chocolate chunks after it cools is the way to go.
Regardless of these extra steps of fine tuning, this is a sweet and crunchy treat!
