  1. Combine salt, vinegar, and water in a pot. Bring to a boil.
  2. Trim and pack beans into hot jars lengthwise leaving 1/4 inch headspace.
  3. Add hot pepper or 1/4 teaspoon pepper flakes to each jar along with a clove of garlic and a head of dill.
  4. Ladle hot liquid over the beans leaving 1/4 inch headspace.
  5. Process in hot water bath 10 minutes.
