Dilly Beans
Ingredients
- 2 pounds green or wax beans or mix
- 1/4 cup canning salt
- 2 1/2 cups cider vinegar
- 2 1/2 cups water
- 4 cloves garlic
- 4 heads dill
- 1 teaspoon hot pepper flaxes or hot peppers
Instructions
- Combine salt, vinegar, and water in a pot. Bring to a boil.
- Trim and pack beans into hot jars lengthwise leaving 1/4 inch headspace.
- Add hot pepper or 1/4 teaspoon pepper flakes to each jar along with a clove of garlic and a head of dill.
- Ladle hot liquid over the beans leaving 1/4 inch headspace.
- Process in hot water bath 10 minutes.
