Divinity Candy
Ingredients
- 2 1/2 cups sugar
- 1/2 cup light corn syrup
- 1/4 teaspoon salt
- 1/2 cup water
- 2 egg whites
- 1 teaspoon vanilla
Instructions
- In a 2-quart sauce pan, combine sugar, corn syrup, salt and water.
- Cook to a hard ball stage (260'F) stirring only until the sugar is dissolved.
- Meanwhile, beat egg whites until stiff peaks form.
- Gradually pour sugar syrup over egg whites, beating at high speed with an eletric mixer.
- Add vanilla & beat candy until it holds its shape; 4-5 minutes.
- Quickly drop from a teaspoon onto waxed paper.
- Allow to dry.
Notes
Dad could definitely keep a secret. Christmas eve Mom was making divinity without an electric mixer. She spent hours beating the egg whites stiff and then beating the candy stiff. The next morning Dad presented his gift to her–an electric mixer.
