Frosted Peanut Butter Bars
Ingredients
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 whole egg
- 1/3 cup peanut butter
- 1/2 teaspoon soda
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1 cup flour
- 1 cup oatmeal
- 1 cup chocolate chips
- 1/2 cup powdered sugar
- 1/4 cup peanut butter
- 4 teaspoons milk
Instructions
- Cream butter and sugars. Blend in egg. 1/3 cup peanut butter, soda, salt, and vanilla. Stir in flour and oatmeal.
- Spread in 9x13 inch pan. Bake at 350F until golden brown, about 15 minutes.
- Top with chocolate chips while still hot. Frost immediately with blend of last three ingredients.
Notes
This was a 4-H baking project find. The photo is from a summer 2024 batch made using unsweetened peanut butter freshly opened and stirred. Despite the PB being thinner, the frosting became thicker. I actually had to add a bit of water to make it spreadable. Results were delicious. The bars seemed thicker than I recall and the topping more like frosting than the glaze I expected.
