Frosted Peanut Butter Bars

Instructions

  1. Cream butter and sugars. Blend in egg. 1/3 cup peanut butter, soda, salt, and vanilla. Stir in flour and oatmeal.
  2. Spread in 9x13 inch pan. Bake at 350F until golden brown, about 15 minutes.
  3. Top with chocolate chips while still hot. Frost immediately with blend of last three ingredients.

Notes

This was a 4-H baking project find. The photo is from a summer 2024 batch made using unsweetened peanut butter freshly opened and stirred. Despite the PB being thinner, the frosting became thicker. I actually had to add a bit of water to make it spreadable. Results were delicious. The bars seemed thicker than I recall and the topping more like frosting than the glaze I expected.
