Ginger Tea Concentrate

  1. Peel and thinly slice the ginger. Put in saucepan with water and simmer for 30 minutes. Strain liquid into a jar. There will be about 3/4 cup concentrate. Add the Stevia and stir to dissolve. Cover and refrigerate.
  2. For a cup of ginger tea, stir 1/2 to 1 teaspoon into a cup of hot water. Additional sweetenter (Stevia) may be added to suit your taste.

Diane provided this recipe from the book “Stevia Sweet Recipes” by Jeffrey Goetemoeller. It can be used alone or as extra flavor with other teas, beverages, desserts, etc. and is sugar free.

Unused raw ginger can be wrapped and frozen to use another time. Diane says it is yummy in lemonade and in burdock/slippery elm tea.

Sandi makes it without sweetener, then candies the ginger root pieces after straining by stirring them in simple syrup and drying in the oven. They are good on lime bars. The concentrate is great added to limeade; add about a teaspoon per cup.
