Good Spaghetti Sauce
Ingredients
- 1/2 cup salad oil
- 4 medium onions
- 4 cloves garlic
- 16 pounds tomatoes
- 2 twelve ounce cans tomato paste
- 2 Tablespoons salt
- 1/4 cup sugar
- 1/4 cup parsley
- 2 Tablespoons oregano leaves
- 1 teaspoon pepper
- 2 dried bay leaves
- 2 teaspoons dried basil
Instructions
- In a 12 quart Dutch oven over medium heat, cook onion and garlic in salad oil until tender, stirring frequently (about ten minutes).
- Add remaining ingredients, over high heat, bring to a boil. Reduce heat to medium-low, partially cover and cook two hours.
- Discard bay leaves. Can and seal.

Not a lot of details were provided in this recipe from Mom. I am guessing you wash, peel and chop the vegetables before cooking. You may want to finely chop or puree the vegetables as well, but chunky sauce is popular. Mullens have a lot of experience canning spaghetti sauce. Consider offering to help them to learn the tricks.
