Griddle Cakes
Ingredients
- 2 cups flour
- 5 teaspoons baking powder
- 2 teaspoons salt
- 3 Tablespoons sugar
- 2 large eggs
- 2 cups milk
- 2 tablespoons melted shortening/oil
Instructions
- Sift dry ingredients and combine with remaining ingredients. Stirjust until blended.
- Heat griddle or heavy frying pan until moderately hot. Test temperature by sprinkling with water. Pan is ready when droplets stay round and dance.
- Grease pan lightly before each pour. Use 1/4 cup batter for each cake. Bake until top is full of bubbles breaking and edges are dry. Brown other side.
