Homemade Egg Noodles
Instructions
- In a large bowl beat yolks and eggs with salt. Using a fork, slowly add flour. Soon it will be too stiff for a fork, so start mixing and kneading with your hands. (Food processor works well too and some bread machines can mix it.) When no more flour can be added, cut into 3 equal pieces and let rest for a few minutes covered.
- Dust a board or counter with flour and roll as thin as possible. Let rest for 10 minutes then sprinkle with flour and roll like a jelly roll. With a knife cut roll into noodles the width you prefer. Unroll the noodles and lay on a clean towel to dry until they have lost their surface dampness. Bring a large pot of water to a boil. Drop noodles in and cook 5-10 minutes depending on thickness.
