Mint Christmas Meringues
Ingredients
- 2 whole egg whites
- notes
- 1/4 teaspoon creme of tartar
- 1/8 teaspoon salt
- 1/2 teaspoon peppermint extract
- 1/8 teaspoon green food coloring
- 1 cup sugar
- 1 cup chocolate chips
Instructions
- Beat egg whites with creme of tartar and salt until foamy.
- Gradually beat in sugar. Continue to beat until stiff peaks hold their shape.
- Fold in coloring and extract.
- Fold in chocolate chips.
- Drop by spoonful onto wax/parchment paper lined cookie sheets.
- Bake at 250F for 15 minutes. Turn off oven and leave closed until oven cools completely.
Notes
For fun, pipe into wreath or Christmas tree shapes and replace the chocolate chips with mini M&Ms. Be sure to use fresh eggs at room temperature to get the airiest cookies!
Sometime around 2020, this recipe stopped working for me. I moved the addition of extract and coloring to after whipping the egg whites stiff which helped.
If your egg whites won’t stiffen, try adding a teaspoon of meringue powder.
