Peanut Brittle

Instructions

  1. Combine sugar and corn syrup in a microwave safe bowl. Cook on HIGH for 8 minutes, stirring once half way through heating.
  2. Stir in butter and vanilla. The syrup will turn golden.
  3. Cook on HIGH for 2 more minutes. Remove from heat and thoroughly stir in baking soda (the syrup will foam). Stir in nuts.
  4. Pour into buttered jelly-roll pan. Use a buttered metal spoon to press and stretch the candy thin.
  5. Once cold, blot with paper towels and break into irregular pieces. Store in an air-tight container.

Notes

This is so much easier than watching a candy thermometer!
