Peanut Brittle
Ingredients
- 1 cup sugar
- 1/2 cup light corn syrup
- 1 teaspoon butter
- 1 teaspoon vanilla
- 1 teaspoon baking soda

- 1 cup skinned salted peanuts
Instructions
- Combine sugar and corn syrup in a microwave safe bowl. Cook at 80% power for 8 minutes, stirring once half way through heating.
- Stir in butter and vanilla. The syrup will turn golden.
- Cook at 80% power for 2 more minutes. Remove from heat and thoroughly stir in baking soda (the syrup will foam).
- Microwave on HIGH an additional 15 seconds. Quickly finish by stirring in nuts and
- pouring into buttered jelly-roll pan. Use a buttered metal spoon to press and stretch the candy thin.
- Once cold, blot with paper towels and break into irregular pieces. Store in an air-tight container.
Notes
This is so much easier than watching a candy thermometer! Original recipe had all the cooking done on HIGH, but our 1100W microwave made it a dark, burnt, quickly hardening mess. I thank my son Ryan for helping figure out the right power level.
