Sandi's Chocolate Chip Oatmeal Cookies
Ingredients
- 3/4 cup margarine
- 1 cup packed light brown sugar
- 1/2 cup sugar
- 1 whole egg
- 1 egg yolk
- 2 teaspoon vanilla
- 1 cup flour
- 1/2 teaspoon baking soda
- 1 dash salt
- 1/4 cup milk
- 2 1/2 cups oatmeal
- 12 ounces Hershey's chocolate chips
Instructions
- Heat oven to 375F.
- Beat butter, brown sugar, granulated sugar, egg, egg yolk, and vanilla in a large bowl on medium speed of mixer until fluffy--at least five minutes.
- Stir together flour, baking soda, and salt; add alternately with milk to butter mixture, beating until well blended. Stir in oats and chocolate chips.
- Line cookie sheet with parchment or lightly grease with margarine wrappers. Drop batter by heaping teaspoon onto prepared sheet. Bake 8-10 minutes or until lightly browned. Remove to cooling rack and cool completely.
Notes
The extra yolk is a secret from the Death By Chocolate’s Cookie Book. The extra time beating the eggs and sugar was a suggestion from Linda Ricketts. I like to add raisins into the batter, too!
