Sweet Pickle Relish
Ingredients
- 12 large cucumbers
- Large cucumbers are about 2 inches in diameter and 8 inches long.
- 1 large green pepper
- 4 medium onions
- A medium onion is about 3 inches in diameter.
- 1/2 cup salt
- 1 quart vinegar
- 1 teaspoon black pepper
- 3 cups sugar
- 1 teaspoon seed celery seed
Instructions
- Wash cucumbers; remove seeds. Wash, core, and quarter green pepper. Peel and quarter onions. Grind cucumbers, green pepper, and onion using a meat grinder.
- Stir in salt and let mixture stand overnight.
- Drain. Stir in vinegar, black pepper, sugar, and celery seed. Bring to a boil then seal in jars.
Notes
My household prefers dill pickle relish, but this is what we grew up eating.
