Instructions

  1. Wash cucumbers; remove seeds. Wash, core, and quarter green pepper. Peel and quarter onions. Grind cucumbers, green pepper, and onion using a meat grinder.
  2. Stir in salt and let mixture stand overnight.
  3. Drain. Stir in vinegar, black pepper, sugar, and celery seed. Bring to a boil then seal in jars.

Notes

My household prefers dill pickle relish, but this is what we grew up eating.
