Tomatoed Sauerkraut
Ingredients
- 1 quart sauerkraut, drained
- 5 slices bacon
- 1 medium onion, diced
- 1 1/4 cups canned tomatoes, drained
- Original recipe called for a half number 2 can of tomatoes, drained.
- 1 cup brown sugar
- Original recipe called for 1 cup full brown sugar. Don't skimp?
Instructions
- Fry bacon with onions. Drain off all but 3-4 tablespoons of the grease.
- Mix in sauerkraut, tomatoes, and sugar.
- Bake at 350 degrees fahrenheit for one hour (or longer if you like it darkened).
Notes
I’ve seen similar recipes called German Sauerkraut, Sweet and Sour Kraut, Red Sauerkraut, and Croatian Sauerkraut. The vary in the amount of sugar, choice of protein, addition of garlic or herbs, and other veggies being added. Clearly this is a very flexible dish centered around the pairing of kraut and tomatoes.
