Tomatoed Sauerkraut

  1. Fry bacon with onions. Drain off all but 3-4 tablespoons of the grease.
  2. Mix in sauerkraut, tomatoes, and sugar.
  3. Bake at 350 degrees fahrenheit for one hour (or longer if you like it darkened).

Notes

I’ve seen similar recipes called German Sauerkraut, Sweet and Sour Kraut, Red Sauerkraut, and Croatian Sauerkraut. The vary in the amount of sugar, choice of protein, addition of garlic or herbs, and other veggies being added. Clearly this is a very flexible dish centered around the pairing of kraut and tomatoes.
